Washington High Plains Potato Leek Soup is a garden blend of leeks and other greens that make this soup a year round favorite. Cooked and ready to enjoy in 40 minutes, serve warm with diced ham, or chilled and pureed with a dollop of sour cream! (Previously Idaho Outpost Potato Leek Soup)

Potato, Leek, Celery, Onion, Scallion, Dill, Thyme, Bay leaf.

  • 6 cups Chicken broth
  • 1 ½ lbs Baby red potatoes, chopped not peeled, or 24 oz frozen hash brown potatoes
  • 1 cup Light or heavy cream
  • Salt and pepper to taste

  1. In a 3 or 4-quart pot, bring broth to a boil. Reduce heat and stir in soup mix and potatoes.
  2. Add contents of Washington High Plains Potato Leek Soup Mix and potatoes, bring back to a simmer, cover and cook on low for 30 minutes.
  3. Gently mash potatoes with a fork or back of spoon.
  4. Stir in cream, season with salt and pepper, if desired, and remove bay leaf.
  5. Cover and hold on low heat 5 minutes or longer before serving. To serve chilled, prepare soup and refrigerate overnight. Use immersion blender or potato masher to puree soup. More cream may be added, if soup is too thick. Serve with a dollop of sour cream on top.

    I actually got this soup mix from my Secret Santa at work. I made it yesterday, it was absolutely delicious! I put precooked bacon in it and topped it with a sprinkle of cheese and French's onion rings. It was so good! Perfect on a cold winters night. I can't wait to try the other 2 I got!

    I love this mix, I don't add the milk but the flavors of the dry ingredients are outstanding. I actually make a cabbage soup with this added. Great for the pantry and emergency foods.

    Wanted to let you know how much I’ve enjoyed your potato and leek soup. Had like 3 servings one sitting it’s that good. I’ve made a little twist on it since I’m converting to vegan and the recipe calls for heavy cream. So being an island boy and Bahamian at heart I substituted the cream with coconut milk, added some fresh garlic, diced carrots, potato, onions and one unbroken pod of habinaro pepper. This all cooked down in a crock pot and two hours later after I was chillin our a star dish was born. Just soooooooo good.

    So here I am giving you my feedback, it is really freaking deeelicious!! Oh my gosh, I was thrilled at how the soups taste! I was making the cream of potato soup from scratch and I added seasonings but it was still missing something so I went to the grocery store and saw the Potato and Leek Soup mix and thought sure why not! So I bought it and mind you it was expensive for that package mix. So I came home and added it to the cream potato soup I had going on the stove and after about 45 mins of simmering I gave some to my guests I had over and they loved it!! They were extremely happy and could not stop talking about how deeelicious it was!! So I just wanted to say it was a hit and to thank you for providing that particular soup mix. I bought the Tortilla Soup mix and we are having it for dinner in about 40 minutes. If it’s anywhere near what the Leek Potato soup taste like I know we will be happy.

    This is our all-time favorite soup! We like it a little more brothy so we add a little extra liquid and we also like to add in a smoky sausage. It's so versatile that you can customize it to your taste. I could eat this every week!
